Bread, Dough And Batter (Module 1)
The Breads Batters and Doughs module of CLS Pro Pastry program is a comprehensive three-week course designed to equip students with the knowledge and skills needed to produce a variety of breads, doughs and batters.
During this module, students will learn how to create a mother dough and work with yeast. They will then go on to produce a range of bread products including focaccia, pizza, white pan bread, challah, brioche, baguette, sourdough, and ciabatta.

Pastry Arts (Module 2)
The Pastry Arts module of CLS Pro Pastry program is an intensive three-week course designed to teach students how to create a variety of delicious sweet and savory dishes. During this module, students will learn how to make various types of pastry doughs.
In addition to pastry doughs and choux pastry, students will learn how to create a range of tarts, including lemon tarts, fruit tarts, and chocolate tarts. They will also learn how to make pastry cream and ganache to use as fillings and toppings for their tarts.
Finally, students will learn how to make a variety of biscuits and small chops including macarons, samosa, spring roll, puff puff and more. They will gain extensive practical experience in creating these delicate treats, as well as an understanding of the techniques required to achieve a professional finish.

Modern Dessert (Module 3)
The 3 weeks Desserts module offered by CLS Pro Pastry program is designed to teach students how to make a wide range of delicious and popular desserts. During this module, students will learn to make desserts such as red velvet, apple crumble, frozen desserts, bread and butter pudding, French toast, set cheesecakes, baked cheesecakes, NY cheesecake, tiramisu, creme brulee, chocolate mousse, panna cotta, dessert sauces and many more.
Throughout the weeks, students will learn different techniques, ingredients, and presentation methods for creating these desserts. Additionally, they will learn about flavour pairings, textures, and different decoration techniques to make their desserts look as beautiful as they taste.

Cake (Module 4)
The 4-week Cakes module offered by CLS Pro Pastry program is a comprehensive course designed to teach students how to make and decorate a variety of cakes using different techniques. The module covers a wide range of cakes, including cover cake, pound cake, cupcakes, carrot cake, Red velvet cake, chocolate mousse cake, black forest, mocha cake, mirroir aux fruits and more
Throughout the module, students will learn different cake-making techniques, including mixing, baking, layering, and frosting. They will also learn how to use different types of ingredients and equipment, such as piping bags and tips, to create unique designs and decorations on their cakes. Throughout the module, students will have the opportunity to practice their skills and experiment with different techniques to create unique and personalized cakes. By the end of the course, students will have developed the skills to create a variety of cakes and the confidence to create their own cake designs.

Full Patisserie Diploma (6 Months)
This is an intensive full-time course designed for aspiring pastry chefs looking to achieve professional standards. This comprehensive 26-week program covers four key modules, focusing on essential pastry and baking skills, including bread making, tarts, cakes, and desserts.
Students will gain hands-on experience in the science of pastry, mastering precise techniques in baking, cake decorating, chocolate, hot and cold desserts, and more.
